Lime Sherbet Float with Strawberries and Prosecco

A wonderful sweet and tart combination, this Lime Sherbet Float with Strawberries and Prosecco is made even better with the addition of chilled Italian Prosecco.

If you know how much I love crafting cocktails than you must know I was excited to see the Food Network series that I participate in finally call for cocktails. What took you so long; don’t you know there can be no real #SummerSoiree without them? I opted to make something totally summery with fresh fruit and sherbet in this Lime Sherbet Float with Strawberries and Prosecco.

I love the fizz that is added to a cocktail with Prosecco and it did not disappoint. It’s a great blend of a kid’s treat with an adult twist. Also, make sure you check out the other bloggers additions to this event; a whole plethora of summer cocktails!

I made this cocktail on a gloomy and chilly summer day. My plans had been to run to the store to buy a carton of lime sherbet but when the rains started and I had yet to leave I decided to punt and see if I had the ingredients to make homemade lime sherbet.

Luckily I keep the bowl to my ice cream maker frozen at all times and even luckier I had everything I needed…which really isn’t a lot. Milk, sugar and limes. Well, maybe not milk but I did have half and half; maybe a bit decadent for sherbet but also so very, very good.

It might not fit the FDA requirement requiring that sherbet contain between one to two percent butterfat by weight but it’s also clearly not the higher fat and creaminess of ice cream. I won’t bother you more details…I’ll do that next week when I do a post on sherbets. Now that I’ve reminded myself of how much I love homemade sherbet, I absolutely have to share the love!

Lime Sherbet Float with Strawberries and Prosecco from @everydayum

This cocktail is sort of a strawberry mojito with lime sherbet and sparkling wine. Strawberries and mint are muddled and combined with rum and sherbet and stirred to a smooth consistency. As if that weren’t enough, it’s topped with a scoop of more sherbet and finished with some Prosecco.

When I put the word out to neighbors that I had one to share; well the response was greater than normal. I set up shop quickly and everyone who wanted one showed up on my patio! While I sometimes bemoan living on such a small lot I have to admit I do love having neighbors so close by that walking over is no big deal…I need my eaters and drinkers!

Easy mocktail too…just omit the rum and top with icy cold sparkling water; you might need a touch of sugar for kids so taste and test before serving. Either way it’s cold, a bit creamy, not too sweet and with just enough kick that you’ll know you’re drinking a cocktail even if after one you think you should be playing tag with the neighborhood kids. Cheers!

Lime Sherbet Float with Strawberries and Prosecco

Ingredients
  

  • 3 medium strawberries hulled
  • 6 mint leaves
  • 1 ½ ounces white rum
  • ½ cup lime sherbet or sorbet (add more if necessary)
  • 2 tablespoons simple syrup boil equal amounts of sugar and water until the sugar is dissolved. Pour into contain and refrigerate untill cold. Store in fridge.
  • 4 ounces Prosecco or soda water
  • Strawberries for garnish

Instructions
 

  • In the bottom of a chilled glass, muddle together the strawberries and mint. Use the handle of a wooden spoon if you don’t have a muddler.
  • Add the rum, lime sherbet and simple syrup and stir.
  • Add another scoop of sherbet and finish by pouring Prosecco to the top of the glass.Garnish with a strawberry, add a straw and enjoy!

  1. When it comes to sherbert, half and half works for me! That must be luscious stuff. This sure is a luscious looking float — don’t think I’ve ever combined sherbert and Prosecco. Really like the idea, though. This is super nice — thanks.

    1. So good John. I’m making a couple more this weekend with different dairy ingredients. Probably one 2% and one half 2% and half from the Half & Half. Using testing as an excuse. Light years better than anything from the grocery store!
