Pomegranate and Blood Orange Mimosa Cocktail
There is nothing I love more for a breakfast cocktail than a Mimosa and this Pomegranate and Blood Orange Mimosa Cocktail is especially beautiful!
I don’t think I’ve ever made a Mimosa that wasn’t going to be served for brunch, have you? It must the the orange juice component that makes it seem so appropriate for morning and this year it’s going to be this beautiful Pomegranate and Blood Orange Mimosa Cocktail.
I love Mimosas but I can’t stop fiddling with them; once I started adding liqueurs or other juices to the mix they’ve become a bit like margaritas…the sky is the limit! For me it’s seems that the beginning of spring is the advent of my Mimosa drinking and Easter Brunch signals the day and I find reason through the year to serve them often; especially over holidays.
Maybe it’s the glassware? There is something about champagne glasses that calls for a special occasion and brunches usually are just that. This year I decided to make something using blood oranges but my plans went awry when I started to juice the ones that I had.
It would have taken a bushel of them to have made enough juice to fill a pitcher for 6-8 cocktails so first I freaked out a bit and then started thinking about what to do next and as often happens my pantry led the way.
Right there, right in front of me…a bottle of Pomegranate Juice; I simply knew that combining the two would be perfect.
I loved this; mostly because the color would not be compromised; I wanted that vibrant burgundy color on my holiday table. I make these Creamed Eggs on Toast Points every Easter morning and this year these cocktails will add a lot of sophistication to our really simple breakfast.
So easy to make too. I combine the juices and the orange liqueur and refrigerate the mixture for several hours along with a couple of bottles of the sparkling wine I’ll use; typically Prosecco. Combining the two as they’re served makes certain the cocktail benefits from the bubbly.
Not just for Easter; the Pomegranate and Blood Orange Mimosa Cocktail would be perfect for any spring or summer holiday event. Wouldn’t they be lovely for Mother’s Day or a wedding reception or a New Years Day brunch? But you don’t have to be a mom or get married to enjoy them; just have some friends over, pop the cork and sip away. They’re perfect and perfectly beautiful too…Cheers!

Pomegranate and Blood Orange Mimosa Cocktail
Ingredients
- 4 cups Pomegranate Juice chilled
- 2 cups blood orange juice chilled (Use regular OJ if blood oranges are not available)
- 4 oz orange liqueur
- 1 bottle 750 ml Prosecco, chilled
Instructions
- Combine the pomegranate juice, orange juice and orange liqueur in a pitcher. Stir well to combine and chill together for at least 30 minutes.
- Fill champagne glasses two-thirds full with juice combination and top off with Prosecco.
