Tuna Dijon Burger
This Tuna Dijon Burger is a great alternative to beef. Sourcing tuna that is wild caught & sustainable is a good choice.. and it’s tasty!
I know…I’ve been completely errant with posts for #Waunstrong Wednesday and for lots of reasons; primarily my living situation that makes blog posts more difficult to complete. But I had to share this Tuna Dijon Burger.
The need for Lauren to eat nutritious foods remains and I’ve received some great recipes from the folks at the Cancer Treatment Centers of America and one that I saw recently coincided with an offer from Wild Planet to try their tuna and it seemed prophetic; how could I not??
I recall many years of eating plain tuna with a bit of mayonnaise, celery and onion and not much else. Not that I minded but it’s not something that is particularly inspiring; it’s one of those things you eat but never think to actually blog about; doesn’t EVERYONE know how to make a basic tuna sandwich?
So…seeing this recipe with a combination of ingredients I had never before considered with tuna was interesting and sounded great. But nothing really prepared me for how fantastic the tuna was that I would be using…NOTHING!

I found these facts important as I learn more and more about sustainability and ethical fishing practices to help make determinations for the food I put on the table:

- Pole and troll tuna fishing is rated as the best catch method for tuna by the Monterey Bay Aquarium Seafood Watch® program, Blue Ocean Institute, World Wildlife Fund (WWF), Greenpeace and other industry experts.
- They do not source ANY fish from long-line or purse seine fisheries.
- Wild Planet is currently providing 100% sustainably caught products compared to other major brands claims that they will be sustainable compliant by 2014 or 2015. Some companies’ efforts to reach compliance for sustainability include using FAD-free purse seining, which is not considered a best catch method by a consensus of eco-organizations.
All of this means that they have the advantage of being one of the very few packaged seafood companies that oversees selecting only the highest quality fish from the catch, directing quality control in the packing of the product and offering the product to their customers.
All of this data can start to sound like just another highfalutin marketing message so the real test was in the tasting. Before I even got to that, I was pleasantly surprised at the product inside the open can and wish I had thought to take a photo for you.
This recipe for tuna burgers could not have showcased it better. Low in fat and filled with flavor, they are in line with every recipe I’ve received from CTCA…you wonder how anything that tastes SO good could in fact also be labeled as healthy…but it’s true!
Health benefits of deep-sea fish such as tuna are:
- Rich source of potassium – excellent for brain function, blood glucose regulation, healthy muscle contraction, helps to regulate metabolism by assisting the processing of fats, carbohydrates and proteins.
- Excellent source of omega-3 fatty acids – helps to preserve brain function, protects the heart, regulates insulin, and assists in weight management by promoting early and prolonged satiety.
- Rich in selenium – promotes strong immune function and breast health, protects the heart by helping to increase HDL and to lower LDL cholesterols.
I left a huge tarragon plant at the house that I recently sold; I am missing it right now; it was wonderful how it complimented the tuna. I ate dinner with friends when I served the patties with some fresh vegetable pasta and I heard over and over how good it was. Like I said…the perfect marriage of ingredients.
By the way, I found the Wild Planet Tuna at Sprouts but I’ve heard with good evidence that it can also be found at Costco; I will most certainly be on the hunt next time I’m there!
For those of you that would love to be updated on Lauren’s treatment, we’re all so pleased to see that this first round has been so successful. No longer able to feel or see her lump gives everyone great hope.
She will still need to continue with the proscribed lumpectomy and rounds of radiation but with only 4 weeks of chemo to go; it’s a blessing to know it has worked and she and I both thank you for your steadfast support and continued prayers.
Tuna Dijon Burger
Ingredients
For the Tuna Patties:
- 3 Tbsp mayonnaise
- 1 Tbsp Dijon mustard
- 1 large egg white
- ¼ cup flax meal I found this at Sprouts in the bins
- ¼ cup bread crumbs
- 2 – 6.5 oz. cans of tuna in water drained and flaked
- ¼ cup chopped green onions
- 1 tsp tarragon
To Make the Patties:
- ¼ cup bread crumbs
- Non stick cooking spray
Instructions
- Combine the first three ingredients in a medium bowl and add remaining ingredients;stir well.
- Divide mixture into four equal portions, shaping into patties.
- Press remaining 1/4 cup of bread crumbs onto both sides of patties. Brown patties on both sides in a non-stick skillet coated with non-stick spray.
- Serve as a plain patty or as a sandwich with lettuce, tomato and a whole wheat bun.
These tuna burgers look yummy, and I’ve been looking for a good source for canned wild albacore tuna. Great to know about Wild Planet. But more important, I’m so happy to hear that Lauren’s chemo treatments have been so successful. Great news, Barb!

This is a very creative recipe! More importantly, what fantastic news about your daughter! My mom and both of my grandmothers beat breast cancer, and power of prayer is amazing! 🙂 I am sure you will come up with a great celebratory treat after she finishes chemo soon. 🙂
Yes, she’s probably had her share of green smoothies to last a lifetime! Good to hear about your mom and grandmothers Claire; this was very hard to imagine happening to a young woman…but being reminded of people fully recovering and seeing Lauren’s good progress is encouraging.
So glad to hear the update on Lauren and the positive news! These burgers sound good I am very guilty of only using canned tuna (always pole fished and sustainable!) in plain tuna salad. This is a great new idea, thanks!
We just loved these Jane; I served them with some pasta and fresh veggies and it was a terrific meal.
Sustainable seafood is a very important issue for me. Canned tuna has traditionally been a very bad product in this regard. I am pleased to see more and more producers handling their process responsibly. GREG
Me too Greg and it’s sad that there are really very few large fish that we should be eating…we need to give them a break before they are gone!

I’ve never considered making tuna burgers from canned flaked tuna. Thanks for the fantastic idea, I’m going to try this soon! Love the health benefits also. So glad that Lauren’s treatment is going well. My mother suffered from breast cancer (including surgery, chemo and radio) two years ago and it was horrible, in more ways than I can count. So glad that treatment options are so successful these days. Will be thinking and praying for you, Lauren and your family! xx
We feel very blessed Laura; she is in support groups with others that are not seeing the same results. As much as it’s broken my heart for someone so young to get cancer, I also think it’s part of why she is fighting it so well. My thoughts and prayers to you and your mother too; hope she is doing well.
Great to hear that Lauren’s treatment seems to be working! Best wishes to her, and she remains in my thoughts. I’ve tried the Wild Planet tuna before, and it’s quite good. As are several Italian tunas that I buy. The best ones are the oil packed tuna, IMO. Yes you do have added calories from the oil (even if you drain the tuna, some oil remains), but you end up using a lot less mayo or whatever – so net net you’re probably ahead on calories (which is to say, eating fewer). Anyway, great burger! I rarely do tuna burgers, and need to sometime. Thanks for this.
I did purchase the product packed in olive oil…I’ll strain the heck out of it but agree it adds considerably to the overall flavor so prefer it too. Many likened this to a crab cake which I guess it is but either term we sure loved them!

Now this tuna burger sounds really delicious. I’m particularly intrigued by the Dijon and tarragon in the mixture. I would have not thought to pair those with tuna, but I’m anxious to give it a try.
It seems I might have had those combinations in a salad dressing before but this application was the best. I mean it was really SO good!

I am so glad to hear that Lauren is doing so much better and you can now see the end of the road for her treatment. This burger looks wonderful. Such a nice easy meal for the summer. I can’t wait to try it.
Our lack of experience dealing with this didn’t prepare me for this to happen…I guess I assumed treatment would minimize it before they did the lumpectomy; so it was absolutely great news. She has been a champ through all of this; her positive attitude certainly didn’t hurt.
Wild Planet products do sound great and this burger certainly is impressive! Great news about Lauren. Not being able to see nor feel the lump is so very encouraging. Wishing her much continued success with her treatments and recovery.
I’ve got a book all about sustainable seafood and so much of what we take for granted are fish that need a break so I’m looking more closely at sustainability and trying to do my part. This tuna is a twofold find Paula…great taste and part of that larger global process to insure we have fish in the ocean forever.
